Summary

This standard specifies a method for the determination of water-soluble extract. It is applicable to roasted coffee and decaffeinated roasted coffee. Extraction from a ground roasted coffee-test portion by boiling water. Subdequently filtration to the completed extraction. Gravimetric determination of the content of an aliquote part of the filtrate by evaporation to dryness at 103 °C. The water-soluble extract of roasted coffee is expressed as a percentage by mass, on the dry basis in g/100 g.
